Smoked Tomato Sriracha-esque Hot Sauce
Beautiful tomatoes from Everwild Farm (Amber, Pa) were blended with Fresnos and Red Jalapeños from Lancaster, Pa, as well as a good amount of garlic, and allowed to naturally ferment. Once this mash was fully fermented, it was cold-smoked over Applewood. To finish, it was blended with vinegar and sugar. The end result is something that resembles Sriracha. But with a nice savory quality from the broken down tomatoes, and a nice sweet smokey scent and feel.
Perfect for wings, grilled cheese, noodle bowls, fried rice, roasted brussels sprouts, as well as mixing with mayo or cream cheese for sauces/dips.
Ingredients: Fresh Ghost Pepper, Distilled Vinegar, Sea Salt, Dried Ghost Pepper, Potassium Sorbate, Sodium Metabisulfite.
